Goji and Apricot Bliss Balls

Goji and Apricot Bliss Balls

These are one of my yummiest bliss ball recipes yet! Plus, these Goji and Apricot Bliss Balls take literally 5 minutes to make. They provide beneficial fats, protein to fill you up, and fibre to keep the bowels healthy. From a Chinese dietetics view, these bliss balls are blood and qi building, good for the spleen and nourish your kidney yin (adrenals). My daughter has been having these as a snack the past few days and loves them.

2 cups of blended oats

1 cup of blended walnuts

1/2 cup of goji berries (soaked in hot water)

1/2 cup apricots (soaked in hot water)

1/4 cup coconut oil

3 tablespoons of cacao

desiccated coconut to roll them in

  1. In all dry ingredients into a food processor/blender and blend. Remove into a big bowl
  2. Remove most of the water and blend your apricots and goji into a paste, add back your dry ingredients. Add in your coconut oil and blend until all mixed well.
  3. Roll into balls, then roll in your desiccated coconut and serve/store.It’ss that easy!

These bliss balls can be kept in the freezer for a month or in the fridge for a week. x
