Oat and Almond Choc Cookie


Gluten, Sugar, Dairy Free and Vegan 

I love having healthy snacks in the fridge that don’t take long to make and are minimal ingredients. I also love something I can have for either breakfast or dessert! These oat and almond choc cookies contain no added refined sugar so they are a guilt-free option to packet cookies. They also take less than 5 minutes to whip up and most of the ingredients I am sure you already have.


Containing oats for great fibre to support healthy bowls, almonds contain healthy fats and are high in protein to support healthy blood sugar levels, coconut oil is a great healthy fat for supporting metabolism and a little dark chocolate provides antioxidants rich in polyphenols. These are great to batch back, grab one for breakfast if you’re rushed for time, or enjoy for a late night treat that won’t spike your blood sugars as there is very little sugar. My daughter loves these cookies and I’m happy for her to eat them.



1-cup oat flour (blended oats)

1-cup almond meal

2 eggs

1-teaspoon pure vanilla extract

¼ cup coconut oil

½ teaspoon cinnamon

1 generous handful of dark chocolate chopped



  1. Preheat oven to 180 degrees. In a large bowl, mix almond, oat, and cinnamon. Add in eggs, vanilla and last coconut oil. Mix well. Once combines, add in chocolate bits.
  2. Lay baking paper on a baking tray, roll into balls and flatten. Pop in the oven for 20 minutes or until slightly golden.
